Level 300 Hospitality Management students of the University of Energy and Natural Resources has showed their ability to cook local dishes at a food bazaar on the theme ‘Promoting and sustaining our indigenous dishes, the role of the hospitality students’.
In promoting the indigenous dishes, variety of meals from the various Regions of Ghana were prepared and exhibited. These dishes were categorized so that each and every one from any part of Ghana could taste and have a fair share of differentethnic diets.
Students from the Brong and Ahafo Regions served fresh palm wine, ginger drink, boiled yam with garden eggs stew, fufu and dry okro soup whilststudents from Ashanti Region exhibited boiled yam with palava sauce, fufu with goat light soup and prekese drink. Grilled tilapia and banku came from the Central and Eastern Regions, Western Region offered fried rice with chicken, salad and all the goodies that garnishes fried rice, whilst the Northern and volta Regions students nailed it with Tuo Zaafi, waakye, Asaana and special sobolo.
An Instructor in the Department of Ecotourism, Recreation and Hospitality Management, Pepertual Zaazie explained to the dignitaries through the different kinds of meals displayed by the students and saidthe essence of the event was to promote local cuisines in the country.
The Pro-Vice Chancellor, Professor Emmanuel Opuni-Frimpong described the meal as good and suggested that the bazaar should be organized every Friday. The Students Representative Council President Murdock Yeboah was very excited to have tasted the local dishes and urged the students to use such opportunities to create jobs for themselves.
The occasion brought together students, staff and everyone from the university Community to interact as they enjoyed the dishes prepared by the students.
Among the dignitaries who graced the occasion included the Registrar of UENR, Solomon Panford Esq, Senior Assistant Registrar of Human Resource Division, Mr. Alfred O. Appiah, Dean of School of Natural Resources Dr. Simon Abugre, Head of Department of Hospitality Management Dr. Yaw Boakye Agyemang, Dean of School of Sciences Professor Adebayo Adekoya among other staff of the University.
